Happy Friday! I’m so glad that it’s finally the weekend! Although the temps are a little cooler than I was hoping, it’s at least sunny outside!
We’re off to a friend’s house for a low-key happy hour, and I wanted to share this super simple recipe that I’m bringing. It’s healthy & very easy to make. Usually a crowd pleaser too!
Tomato and Mozzarella Bites:
2 tbsp. olive oil
2 tbsp. white balsamic vinegar (but any type will do)
1/4 tsp. dried oregano
1/4 tsp. salt
1/4 tsp. pepper
20 grape tomatoes (alter depending how many skewers you want to make)
40 basil leaves (alter depending how many skewers you want to make)
20 mini fresh mozzarella balls (alter depending how many skewers you want to make)
In a large bowl, whisk olive oil, balsamic vinegar, dried oregano, salt and pepper. Add the 20 mini mozzarella balls and toss together. Make sure the mozzarella balls are completely coated.
Thread onto skewers alternating mozzarella balls, basil leaves and grape tomatoes.
I drizzled some additional balsamic vinegar on top to give it a little extra flavor & to make the presentation even better! This is optional.
All in all this takes about 20 minutes & the ingredients are easy to find at your local supermarket.
Since it’s a little cooler tonight (59 and low in the 30s, ugh), I opted for this Lilly Pulitzer off-one-shoulder pullover. It’s super comfy & feels like a sweatshirt. I’m pairing it with denim jeans & booties. However, it would look great with white jeans or black jeans as well. My necklace is also from Lilly!
